Baking & Food Product Development Manager - Full Time, Permanent

Hybrid working - Travel to all UK locations - 3 days in person per week

Hours - 40 hours per week

Pay - £34,000 per annum + up to £6,000 performance bonus

THE ROLE

As our Executive Chef, you’ll lead the vision, development and consistency of all food and beverage offerings across The Big Bakes. From the creative spark behind new monthly bakes to overseeing supplier relationships and food standards, you’ll shape the products that bring our baking experiences to life.

You’ll work closely with our Head Bakers, Site Teams and the wider leadership group to ensure every recipe, bar menu and corporate bake is exciting, operationally efficient and delivered with consistent quality. This role blends creativity, product innovation, operational understanding and commercial awareness to support our growing portfolio of sites.

As part of our central team, you’ll help strengthen food quality, streamline processes, support training for bake execution and build a scalable food strategy that aligns with our growth.

WHAT YOU’LL DO:

RECIPE AND MENU DEVELOPMENT

  • Design, test and launch new monthly bakes, seasonal menus and bar offerings.

  • Organise & co-ordinate test bakes and gather feedback from Head Bakers to refine consistency and quality.

  • Oversee the full Corporate and Bespoke Bake portfolio, ensuring recipes are practical, scalable and guest-pleasing.

  • Design and manage our onsite cafe and bar menus ensuring excellent food, standards and sourcing.

  • Lead the creative development, quality standards and ongoing evolution of our bar and café menus, ensuring every item is delicious, operationally efficient and enhances the guest experience.

  • Develop recipe assets for Marketing, including written guides, operational notes and video content.

  • Ensure bake documentation, allergen information and calculators are updated and communicated effectively each month.

FOOD QUALITY & STANDARDS

  • Maintain the highest standards of food quality, appearance and consistency across all venues.

  • Conduct regular quality checks, tastings and site visits to support Head Bakers and site teams.

  • Maintain all allergen documentation and ensure updates are accurate and timely.

  • Support EHO compliance, food hygiene processes and safe ingredient handling protocols.

SUPPLIER & PARTNERSHIP MANAGEMENT

  • Manage all food and beverage suppliers, maintaining reliable supply, strong relationships and favourable pricing.

  • Lead on sponsorship and supplier partnership management

  • Maintain a central supplier list and ensure purchasing standardisation across all sites.

  • Plan and forecast bulk orders for our locations from Creation Corner, seasonal peaks, avoiding overstocking or waste by using technology and stock tracking.

COSTING & COMMERCIAL AWARENESS

  • Analyse ingredient costings and recipe profitability, recommending adjustments where needed.

  • Work with the Head of Operations to ensure product decisions fully deliver our customer promise of creativity, quality and commercial efficiency.

  • Support financial planning for food operations, especially during new product launches or site expansions.

COLLABORATION & PROJECT SUPPORT

  • Partner with the Head of Operations on new site openings, ensuring kitchens, equipment and menus are fully operational from day one.

  • Work closely with the Company Trainer to support training packs, baking demonstrations and rollout of new recipes.

  • Collaborate with the Marketing Team on campaigns, launches and content creation that aligns with operational practicality.

WHO YOU ARE:

  • Creative and detail-oriented with experience in product development, patisserie, recipe design or menu innovation.

  • Experienced in kitchen management, recipe documentation and implementing consistent standards.

  • Strong understanding of allergen management, food hygiene, EHO requirements and safe food handling.

  • Organised and efficient, balancing creativity with commercial awareness and operational constraints.

  • A collaborative communicator who enjoys working cross-functionally with operational, training and marketing teams.

  • Passionate about creating joyful, accessible baking experiences that deliver real “wow” moments for guests.
