JOB SUMMARY:

​

We have an exciting opportunity for a highly personable, driven and organised Head Baker and Site Manager to join our team and journey, who will head up our London sites.  The successful candidate will manage our existing and potential new London site.

The successful candidate will manage the event from recipe development, staff management & performance and customer hosting, to scheduling and stock control. Key responsibilities of the role include overall operational management and running of The Big London Bake, its staff, the smooth running of the day to day as well as running weekly meetings with their team and attending weekly meetings with the owners.

The role provides significant diversity, with experience in management, organisation and customer experience - if you love interacting with people, hosting a tent full of budding bakers, imparting your knowledge and skills on novices and creating fantastic baked goods at truly unique London locations while taking a lead on the overall management of the event then keep reading.

KEY TASKS:

​

  • To lead and manage up to 40 novice bakers while creating a fun and relaxing environment

  • To manage a team of bakers and assistants that support the daily running of the event

  • To work with the central management team on recruitment, private bookings and merchandise sales and ordering

  • Financial reporting on monthly site running costs and budgeting

  • To take ownership of the smooth running of the site and future bar

  • To be accountable for meeting monthly customer review targets

  • To manage the daily/monthly inventory, stock control and staff scheduling

  • Manage a strict cost control budget and implement effective stock control processes and ordering systems

  • To be accountable for having weekly meetings with the Head Bakers and central team

  • To conduct reviews and set targets for new staff

  • To conduct any relevant warnings or disciplinary meetings where necessary

  • Collating feedback and reporting to central team

  • Discussing and implementing new ideas, sales opportunities and promotional activity to help streamline the running of the sites

  • To host a tent full of baking novices, introducing the event and interacting throughout

  • To lead the creation of recipes that will be followed by members of the public who attend our event

  • To oversee the safe and secure operation of our London sites

  • To be responsible for training the team, including periodic training refreshers, checks and ensuring all documentation is up to date

  • To conduct and be responsible for health and safety checks, risk assessments and tasks

  • To ensure a 5 star food hygiene standard is adhered to and administered

  • To provide demonstrations and participate in creating baking related content for the central team

  • Approach tasks and challenges with creative thinking

  • Work collaboratively and effectively with the central team and your wider team

  • Have experience across a wide range of baked goods from cake decorating/ pastry making / biscuits / macaroons etc.

RESPONSIBILITIES & DUTIES:

​

Bringing both baking and management knowledge, you will maintain standards, improve customer experience and work with our teams to help grow The Big Bakes.

​

  • Oversee the event's smooth operation.

  • Manage costs, stock and inventory

  • Follow all food and hygiene food and safety regulations

  • Adhere and follow all health & safety requirements

  • Take lead of all staff training, reviews and disciplinaries

  • Manage the arrival of customers when working in the tent.

  • Time management of the event and shift changeover

  • Hosting up to 40 customers in a friendly and fun manner, representing our brand brilliantly

  • Preparing customers ingredients at the start of the day

  • Managing weekly schedules in accordance to bookings and staff leave requests

  • Creating and collaborating on new monthly recipes for the venue

  • Briefing and managing staff

  • Supplier management and relationship building

  • Regularly providing reports, event feedback to business owners

  • Managing booking and arrival systems (eg, DMN Tonic, Square)

  • Keeping up a positive buzz throughout the day, encouraging both staff and customers

  • Ensuring positive morale amongst staff. Creating and implementing incentive schemes that maintain standards

  • Creating an enjoyable environment for our staff and customers

  • Upselling and tracking of merchandise sales and stock levels

HOURS OF WORK:

​

37.5 hrs per week @ £15p/h (overtime may also be available)

Bonus scheme based on site performance

5 days a week - shift work in accordance to bookings

Equivalent of 1 day a week is allocated to management tasks inclusive of - weekly meetings, reporting, scheduling and stock ordering/weekly checks etc. 4 days a week will be managing the events. Time management is flexible and is down to the individual on how their time is split.

QUALIFICATIONS AND SKILLS:

​

Previous Pastry Chef Experience Essential

Evidence of managerial experience

Strong background in customer service
