Head of Operations - Full Time, Permanent

London based with regular travel to sites nationwide

PAY

Hours - 40 hours per week

Pay - £45,000 per annum + up to £6,000 performance bonus

THE ROLE

As our Head of Operations, you’ll be the driving force behind how our venues run. From daily service delivery to big-picture planning, you’ll make sure every Big Bakes location is set up for success to give our guests, and team, a seamless experience full of baking joy.

You’ll lead our venue management teams, refine the systems that keep us running smoothly, and take the operational lead on new venue openings. This is a strategic, multi-site leadership role focused on strengthening the operational foundation of The Big Bakes as we continue to grow.

You’ll understand how to use technology, automation and AI to improve consistency and reduce operational admin and you’ll know how to implement change programmes. You’ll know how to build ops dashboards and daily reporting to help yourself and your stakeholders have full transparency on how we are doing.

You’ll oversee the performance, safety, and day-to-day running of all venues, ensuring every site operates with consistency, efficiency, and exceptional guest focus. And as a key member of our wider leadership team, you’ll help shape our operational standards, support our people, and build the structures and processes that allow us to grow confidently and sustainably.

WHAT YOU’LL DO:

OPERATIONAL AND PEOPLE LEADERSHIP

  • Lead day-to-day operations across all Big Bakes sites, ensuring consistency in service, standards, and guest experience.

  • Manage and develop site management, fostering a positive and high-performing culture where your team thrive and have the tools they need to deliver our customer promise of baking joy.

  • Oversee health & safety, food safety practices at our locations (in partnership with the Executive Chef), compliance requirements, including EHO.

  • Conduct and follow up on site audits to ensure strong operational discipline across all locations.

  • Refine and implement operational SOPs, improving efficiency and consistency across the business.

  • You’ll drive consistency across our locations. The same equipment, systems and standards driving a Big Bakes experience which is exceptional no matter which venue you visit.

NEW SITE OPENINGS & PROJECTS

  • Lead the operational setup for new venues, including planning, equipment procurement, staffing coordination, and training support.

  • Ensure new sites open with fully functioning systems, strong operational standards, and confident site teams.

  • Support business-wide operational projects, improvements, and rollouts.

FINANCIAL & COMMERCIAL MANAGEMENT

  • Collaborate with Finance and the Executive Chef on food cost control, supplier efficiency, and operational budgets.

  • Monitor operational KPIs, labour efficiency, stock control processes, and site-level performance metrics.

  • Prepare monthly operational reporting and take ownership of performance improvement plans.

  • Identify opportunities for cost savings, process optimisation, and smarter ways of working, always whilst maintaining a great customer and staff experience.

CROSS-DEPARTMENT COLLABORATION

  • Work closely with the Company Trainer to ensure training is embedded at site level and aligned with operational requirements.

  • Partner with Marketing, Finance, Sales, and the Executive Chef to ensure smooth cross-functional communication and support.

  • Lead or support cross-department projects that impact site performance or guest experience.

WHO YOU ARE:

  • Experienced in multi-site operational management (hospitality, events, leisure, or F&B background is ideal).

  • Comfortable leading, coaching, and supporting site leadership teams across different locations.

  • Highly organised, proactive, and able to juggle both day-to-day detail and strategic planning.

  • Strong understanding of health & safety, food safety implementation, and operational compliance.

  • Commercially aware with experience managing budgets, KPIs, and operational efficiencies.

  • Clear communicator who builds trust, accountability, and strong working relationships.

  • Comfortable travelling to sites across the UK as required.
