Lemon and Berry Tray Pancake

Pancakes are one of the best desserts, but standing and flipping them while everyone else tucks in isn’t fun. With this tray pancake, everyone gets to enjoy fluffy pancakes all at once!

Special Equipment: 20cm x 25cm tray
Ingredients:
200g self raising flour
1 tsp baking powder
30g butter
1 egg
250g milk
2 tbsp caster sugar
Zest and juice of 1 lemon
150g berries
Directions:
Preheat your oven to 180°C/160°C/Gas Mark 4 and grease your baking tin with either extra butter or oil.
Place the flour, baking powder, caster sugar and zest into a bowl and stir to combine.
In a separate bowl or large jug combine the egg, milk, butter and lemon juice, whisk to combine.
Pour the wet mixture into the dry and stir until there’s no dry patches, it’s okay if it’s a little lumpy.
Pour the mixture into the prepared tin and smooth it out.
Scatter the berries over top, half any large berries.
Bake for 20 minutes, the centre should feel firm, but not rubbery.
Slice and serve immediately with your choice of accompaniments.
Tips:
If your tray is a slightly different size you may need to adjust your bake time.
You can swap the lemon for another citrus for new flavour combinations.
You can use frozen berries or even jam if you’re unable to get fresh berries.
