Prosecco and Gold Gummy Bears


These boozy gummy bears are the perfect homemade gift for any occasion. A little gold leaf make these treats a delicacy.

Total Time: 2 hours 30 minutes



Special Equipment: gummy bear mould, pipette and tweezers.



Ingredients:


1 bottle prosecco (750ml) - divided

150g gelatin powder

200g Sugar

Edible 24 carat gold leaf


Directions:

  1. Combine 350ml prosecco with the gelatin in a bowl, leave it for 5 minutes until the mixture begins to become solid. This will allow the gelatin to bloom and become active before we use it.

  2. In a saucepan on medium heat, reduce the other 400ml of prosecco for 5 minutes to intensify the flavour.

  3. Reduce the heat to medium-low, then add the gelatin mixture and the sugar to the reduced prosecco.

  4. Bring to a simmer stirring constantly until the sugar and gelatin fully dissolve and the mixture thickens to the consistency of maple syrup. Remove from the heat. (DO NOT let the mixture boil at any point, this will affect how the gummy bears set.)

  5. You can add the gold to the gummy bears 2 ways: 1) Using tweezers, place a small amount of the gold leaf in each gummy bear mould before filling it with the gelatin mixture. 2) Pour the gold leaf into the gelatin mixture and stir to distribute.

  6. Using a small pipette, fill each gummy bear mould with the gelatin and prosecco mixture.

  7. Place the moulds in the fridge for a minimum of 2 hours before unmolding, to make sure the gummy bears are fully set.

  8. Remove from the fridge and pop the gummy bears out of their moulds. Store for up to 1 week in an airtight container at room temperature.

Tips:

  1. Do not let your gelatin mixture boil at any point, this will reduce the effectiveness of the gelatin.

  2. Have some fun with the colours and use food dye.

  3. The prosecco can be replaced by any wine, so feel free to use your favourite!
