Vegan Berry Curd

Our vegan berry curd – is something sweet that can always be in your fridge! Use it to layer cakes, to swirl in your cupcake frosting, or simply spread on the toast for a delicious breakfast.


Prep Time: 10 Minutes

Cook Time: 7 Minutes

Total Time: 17 Minutes

Yield: approx 500g


Special Equipment: Blender, microwave

Ingredients:


420g frozen berries

60g lemon juice

100g sugar

15g cornstarch


Directions:

  1. Unthaw the frozen berries in microwave and put them in a blender.

  2. Add all other ingredients lemon juice, sugar and cornstarch, then blend together.

  3. Pour the mixture into a saucepan and cook on a medium heat until the curd is thickened. If you taste it, you shouldn't feel or taste the cornstarch.

  4. Pour in a jar and leave to cool. You can store the finished curd in the fridge for 10-15 days.

Tips:

  1. You can defrost the berries right in a blender cup, if it is microwave safe.
