Walnut, Cherry and Sesame Bars


These bars are essential for healthy eating if your life is a bit busy. Keep them in the freezer for a quick boost of nutty fruity nutrients. No baking means these are as quick to make as they are to grab on your way out!

Total Time: 4 Hours 20 Minutes

Yield: 10 bars


Special Equipment: food processor or blender and 21 cm square baking tin

Ingredients:


230g raw walnut pieces

142g sesame seeds

160g dried cherries

1/2 tsp sea salt

4 tbsp desiccated coconut

3 tbsp raw honey or agave nectar


Directions:

  1. Pre-heat oven to 180 standard/ 160 convection/ Gas mark 4

  2. Line an 21 cm square baking pan with parchment paper.

  3. Place the raw walnuts and sesame seeds on separate baking sheets and toast until golden and fragrant, shaking periodically.

  4. Place the toasted walnuts and the dried cherries into a blender or food processor. Process until the nuts and fruit come together to form a sticky ball.

  5. Transfer the nut mixture to a medium bowl and add the remaining ingredients, mix well. Press the mix into the prepared pan and refrigerate until cool, about 4 hours.

  6. Cut into squares or bars and keep stored in the freezer for up to 3 months.


Tips:

  1. Give the bars plenty of time to chill, otherwise they will be extremely crumbly.

  2. Press the mixture firmly into the pan, you don't want any loose spots or the bars will fall apart.
