Zesty Citrus Shortbread

Afternoon treat…. tickle your fancy, with a zesty pick-up treat! Our zesty lemon shortbread will want you wanting more.

Prep Time: 40 minutes

Cook Time: 20 minutes

Total Time: 50 minutes

Yield: 24 biscuits

Specialty Equipment:

biscuit cutters and a sharp knife


125g unsalted butter, softened

55g caster sugar

180g plain flour

1 lemon, zested

1 lime, zested


  1. Preheat the oven to 190C/170C Fan/Gas 5.

  2. Beat the butter and the sugar together until smooth.

  3. Grate the lemon and lime, add the zest to the bowl.

  4. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.

  5. Place in the in the fridge to chill for 10 minutes.

  6. Cut into rounds or fingers and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.

  7. Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.


  1. If the paste starts to stick to the work surface, when rolling lightly sprinkle with a little flour.

  2. Decorate with melted chocolate. You can use any kind of chocolate and have fun with the design! Dip, drizzle or completely cover them and garnish with zest.
