Afternoon treat…. tickle your fancy, with a zesty pick-up treat! Our zesty lemon shortbread will want you wanting more.

Yield: 24 biscuits
biscuit cutters and a sharp knife
125g unsalted butter, softened
55g caster sugar
180g plain flour
1 lemon, zested
1 lime, zested
Preheat the oven to 190C/170C Fan/Gas 5.
Beat the butter and the sugar together until smooth.
Grate the lemon and lime, add the zest to the bowl.
Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.
Place in the in the fridge to chill for 10 minutes.
Cut into rounds or fingers and place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes.
Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.
If the paste starts to stick to the work surface, when rolling lightly sprinkle with a little flour.
Decorate with melted chocolate. You can use any kind of chocolate and have fun with the design! Dip, drizzle or completely cover them and garnish with zest.
