Nyssa is a classically trained and award-winning pastry chef joining the team from Australia. She worked in a variety of patisserie departments in restaurants, luxury hotels and production kitchens. Her specialisation as a chocolatier brought her to judge with the Academy of Chocolate in 2019. She also makes impeccable bonbons and chocolate sculptures, which landed her the esteemed position of Head Chocolatier at Rococo. Outside of chocolate, her other specialty includes decorating cakes with natural items and bright colour palettes.
